- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large skillet, cook bacon until crispy. Transfer to a paper towel-lined plate to drain, then crumble.
- Arrange the cubed bread in the bottom of the prepared dish. Sprinkle with half of the crumbled bacon and 1 cup of cheese.
- In a large bowl, whisk together eggs, milk, heavy cream, garlic powder, dry mustard, salt, and pepper.
- Pour the egg mixture evenly over the bread. Top with remaining bacon and the other 1 cup of cheese.
- Bake for 45-55 minutes, until the center is set and the top is golden brown.
- Let the casserole rest for 10 minutes before slicing and serving. Garnish with fresh chives if desired.
