Instructions
- On a piece of parchment paper, create a 5x5 bacon weave. This will form the wrap for your sandwich.
- Butter one side of each slice of bread. On the unbuttered side of one slice, layer the cheddar and Monterey Jack cheeses. Top with the second slice of bread, butter-side-out.
- Place the assembled sandwich in the center of the bacon weave. Carefully fold the bacon around the sandwich, tucking the ends under to secure it.
- Place the bacon-wrapped sandwich in a large, cold, non-stick skillet. Turn the heat to medium-low. Cook for 5-7 minutes on the first side, until the bacon is crispy and golden.
- Carefully flip the sandwich and cook for another 5-7 minutes on the second side, until the bacon is fully cooked and the cheese is gooey and melted.
- Using tongs, stand the sandwich on its edges for 30-60 seconds per side to crisp up any remaining bacon.
- Remove from the skillet, slice in half, and serve immediately for the best cheese pull.
Notes
Ensure you are using regular-cut bacon for the best results, as thick-cut will not render and crisp properly.
Keep the heat on medium-low to prevent the bacon from burning before the cheese has a chance to melt.
