Preparation and Baking
- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with a paper towel. Season both sides evenly with kosher salt, black pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 2 to 3 minutes per side until a deep golden-brown crust forms. Remove from heat.
- Pour the marinara sauce into the bottom of a white rectangular ceramic baking dish. Nest the seared chicken breasts into the sauce. Spread the basil pesto evenly over the top of each breast, then sprinkle generously with shredded mozzarella cheese.
- Bake uncovered in the preheated oven for 15 to 20 minutes, or until a digital meat thermometer inserted into the thickest part of the chicken reads 165°F (74°C).
- Turn the oven to broil on high for 2 to 3 minutes until the mozzarella cheese is bubbly with golden-brown spots. Remove from the oven, let rest for 5 minutes, and garnish with finely chopped fresh parsley before serving.
