- In a large bowl, combine the cooled cooked quinoa, finely chopped broccoli, shredded cheddar cheese, panko breadcrumbs, beaten eggs, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are evenly distributed.
- Take about 1-2 tablespoons of the mixture and roll it into a ball, then flatten slightly to form a small patty. Place it on the prepared baking sheet. Repeat with the remaining mixture.
- Bake for 20-25 minutes, flipping the bites halfway through the cooking time. They are done when they are golden brown and firm to the touch.
- Let the bites cool on the baking sheet for a few minutes before transferring to a wire rack. Serve warm with your favorite dipping sauce.
