- Pat the salmon fillets completely dry with paper towels. Season both sides with salt and pepper.
- In a small bowl, whisk together the packed brown sugar, soy sauce, and minced garlic until combined.
- Preheat oven to 400°F (200°C). Place salmon on a parchment-lined baking sheet. Spoon the glaze over the fillets. Bake for 12-15 minutes, until the salmon flakes easily. Broil for 1-2 minutes at the end for extra caramelization, if desired.
- Heat olive oil in a large non-stick skillet over medium-high heat. Place salmon skin-side down and cook for 4-6 minutes until crispy. Flip the salmon, pour the glaze over it, and cook for another 2-3 minutes, spooning the glaze over the fillets as it thickens.
- Remove the salmon from the heat and let it rest for a few minutes before serving.

Don't Overcook: Watch the salmon closely as cooking time can vary based on the thickness of your fillets. It's done when it flakes easily with a fork.
