- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper, leaving an overhang to easily lift the bars out later.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, whisk together the melted butter and the packed dark brown sugar until the mixture is smooth and glossy.
- Beat in the egg and vanilla extract until they are fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing with a spatula until just combined. Do not overmix.
- Gently fold in the butterscotch chips.
- Spread the batter evenly into your prepared pan. Bake for 22-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached.
- Let the bars cool completely in the pan on a wire rack before lifting out and cutting into squares.
Notes
For extra chewy bars: Be careful not to overbake! The center should still look a little soft when you remove it from the oven.
