- Heat oil in a cast iron skillet over medium-high heat. Sear chicken for 5-6 minutes per side until deep golden-brown char marks appear and internal temp reaches 165°F (74°C).
Sauce and Assembly
- In a small bowl, whisk mayonnaise, lemon juice, garlic, parmesan, half the parsley, and remaining pepper until thick and creamy.
- Rest the chicken for 5 minutes, then slice into strips. Arrange in a dish, drizzle with sauce, and garnish with the remaining parsley.
