- In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon juice. Beat with an electric hand mixer until completely smooth and creamy.
- Lay an egg roll wrapper in a diamond shape. Spoon 2-3 tablespoons of filling in the center. Fold the bottom corner over the filling, then fold in the sides. Moisten the top corner with water and roll up tightly to seal.
- Heat oil in a large skillet to 350°F (175°C). Carefully place egg rolls in the oil and fry for 2-3 minutes per side, until golden brown. Do not overcrowd the pan.
- Remove the fried egg rolls with tongs and place them on a wire rack to drain. If desired, dust with a mixture of powdered sugar and cinnamon while warm. Serve immediately.
