- In a large skillet, cook the ground beef and onion over medium-high heat until browned. Drain excess grease.
- Stir in the minced garlic and cook for 1 minute. Add the uncooked rice and taco seasoning, stirring to toast the rice for 1 minute.
- Pour in the beef broth and salsa. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
- Remove from heat. Sprinkle the cheese over the top, cover the skillet, and let it stand for 2-3 minutes until the cheese is fully melted.
- Garnish with your favorite toppings and serve immediately.
