- Cook the ramen noodles according to package directions, but for 1 minute less time. Drain immediately and rinse with cold water to prevent sticking and stop the cooking process.
- In a small bowl, whisk together all the ingredients for the stir fry sauce: soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and cornstarch. Set aside.
- Heat the avocado oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and cook until golden brown and cooked through, about 3-4 minutes. Remove from the skillet.
- Add the broccoli florets, sliced bell pepper, and shredded carrots to the hot skillet. Stir fry for 4-5 minutes until they are tender-crisp.
- Return the cooked chicken to the skillet. Add the drained ramen noodles and pour the sauce over everything.
- Toss everything together continuously for 1-2 minutes until the sauce has thickened and coated the noodles, chicken, and vegetables.
- Serve immediately, garnished with sliced green onions and a sprinkle of sesame seeds.
