- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie plate.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the egg and vanilla extract and mix until just combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the semi-sweet chocolate chips.
- Spread the dough evenly into the prepared pie plate. Bake for 25-30 minutes, until the edges are golden and the center is set.
- Let the cookie pie cool on a wire rack for at least 20 minutes before slicing. Serve warm, ideally with a scoop of vanilla ice cream.
Notes
Do Not Overbake: For a perfectly gooey center, remove the pie from the oven when the middle still looks slightly soft. It will finish setting as it cools.
