Make the Cereal Base
- In a large pot over low heat, melt the butter. Add marshmallows and stir constantly with a silicone spatula until completely smooth and glossy.
- Remove from heat, stir in vanilla, and gently fold in the puffed rice cereal until every grain is coated.
Shape and Dip
- With greased hands, roll the mixture into 2-inch spheres. Place on parchment paper to cool slightly.
- Melt white chocolate and coconut oil in the microwave. Dip the top of each sphere into the chocolate, allowing it to drip down the sides.
- Immediately top with red, green, and white nonpareils while the chocolate is still wet. Let set for 30 minutes.
Notes
Use low heat for the marshmallows to prevent them from becoming hard.
