Prepare the Dough
- Puree the cottage cheese in a blender or food processor until perfectly smooth and creamy.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the blended cheese to the flour and mix until a dough forms. Knead for 1 minute on a floured surface.
Shape and Sear
- Divide dough into 4 balls. Roll each out on a floured surface to 1/4 inch thickness, keeping edges rustic.
- Heat a skillet over medium-high heat. Place dough in the dry pan and cook until puffed with dark charred spots (2-3 mins).
- Flip and cook for another 2 minutes until golden and cooked through.
Notes
Use plenty of flour on the work surface to ensure the matte finish.
