- In a high-speed blender, combine the cottage cheese, peanut butter, maple syrup, and cocoa powder. Blend on high for 60-90 seconds, or until the mixture is completely smooth and creamy.
- Pour the mixture into a serving dish. Blend soaked dates with 1 tbsp of water to create a caramel, then spread it over the mousse. Sprinkle with peanuts.
- Melt the dark chocolate chips and drizzle over the top. Refrigerate for at least 30 minutes to set before serving.
