- Pat the chicken dry and cut into 1-inch cubes. In a bowl, toss the chicken with olive oil, garlic powder, salt, and pepper until evenly coated.
- Heat a large skillet over medium-high heat. Add the chicken in a single layer, being careful not to overcrowd the pan. Cook for 3-4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
- Reduce the heat to medium-low. In the same skillet, melt the butter. Add the minced garlic and cook for 30 seconds until fragrant. Whisk in the Dijon mustard, lemon juice, parsley, chives, smoked paprika, and red pepper flakes. Simmer for 1-2 minutes.
- Return the chicken to the skillet. Toss to coat the chicken completely in the sauce. Serve immediately.
