- Preheat your oven to 400°F (200°C). Lightly grease a standard 12-cup muffin tin with nonstick cooking spray.
- Press one slice of ham into each muffin cup, creating a liner that covers the bottom and sides.
- Sprinkle a small amount of shredded cheese into the bottom of each ham cup.
- Carefully crack one large egg into each ham-lined cup.
- Season each egg with salt, pepper, and garlic powder. Sprinkle the remaining cheese and chopped chives over the top.
- Bake for 15-20 minutes, until the egg whites are set and the yolks are cooked to your preference.
- Let the cups cool in the tin for a few minutes before removing. Serve warm.
