Preparation
- Preheat your oven to 425°F (220°C) and prepare a rimmed baking sheet.
- Wash, peel, and dry the carrots thoroughly to ensure the best caramelization.
Roasting
- Toss carrots with olive oil, salt, and pepper on the sheet pan. Roast for 15-20 minutes until slightly tender.
- In a small saucepan, melt butter with honey and minced garlic over medium heat for 2 minutes.
- Pour the glaze over the carrots, tossing to coat. Roast for another 8-10 minutes until the glaze is thick and tips are charred.
