- In a medium bowl, combine the shredded chicken, BBQ sauce, honey, and hot sauce. Mix until the chicken is fully coated.
- Lay a tortilla flat. Sprinkle cheese over one half of the tortilla. Top with the hot honey BBQ chicken mixture, then add another layer of cheese. Fold the other half of the tortilla over the filling.
- Melt 1 tablespoon of butter in a large skillet over medium heat. Place the quesadilla in the pan and cook for 2-4 minutes per side, until golden brown and the cheese is fully melted.
- Remove from the skillet, let it cool for a minute, then slice into wedges. Serve immediately with your favorite dips.
