- Preheat your oven to 425°F (220°C). Cut potatoes into ¼-inch sticks. For extra crispy fries, soak them in cold water for 30 minutes, then drain and pat completely dry.
- In a large bowl, toss the potato sticks with olive oil, Cajun seasoning, salt, and pepper until they are evenly coated.
- Spread the fries in a single layer on a large baking sheet. Bake for 25-30 minutes, flipping once halfway through, until golden brown and crispy.
- While the fries are baking, prepare the Cajun ranch. In a medium bowl, whisk together the mayonnaise, sour cream, buttermilk, ranch seasoning mix, and Cajun seasoning until smooth. Refrigerate until ready to use.
- Just before the fries are done, make the cheese sauce. In a small saucepan over low heat, combine the shredded cheddar cheese and evaporated milk. Stir continuously until the cheese is melted and the sauce is smooth.
- Place the hot, crispy fries on a serving platter. Drizzle generously with the warm cheese sauce and the Cajun ranch. Garnish with chopped green onions and serve immediately.
