- In a large mixing bowl, combine the rinsed and drained chickpeas, halved cherry tomatoes, diced cucumber, finely diced red onion, and halved Kalamata olives.
- In a small bowl or a jar with a lid, combine the extra virgin olive oil, fresh lemon juice, red wine vinegar, dried oregano, salt, and pepper. Whisk or shake until fully combined and emulsified.
- Pour the prepared dressing over the chickpea and vegetable mixture. Toss gently to ensure everything is evenly coated.
- Gently fold in the crumbled feta cheese and chopped fresh parsley. Be careful not to over-mix.
- Serve immediately for the freshest crunch, or cover and refrigerate for 30 minutes to allow the flavors to meld.
