- In a food processor, combine the pitted dates, rolled oats, vanilla protein powder, almond butter, maple syrup, and peppermint extract. Pulse until a coarse, crumbly dough forms. Add water, 1 tablespoon at a time, pulsing until the mixture sticks together. Transfer to a bowl and fold in the mini chocolate chips.
- Scoop 1-1.5 tablespoon portions of the dough and roll between your palms to form smooth balls. Place them on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up before serving.
