Soup Preparation
- Melt butter in a Dutch oven over medium heat. Add diced onions and julienned carrots. Sauté for 3-5 minutes until onions are translucent. Add minced garlic and cook for 1 minute until fragrant.
- Sprinkle flour over the vegetables and stir for 2 minutes to cook out the raw flavor. Slowly whisk in the chicken stock to create a smooth, thickened base.
- Add shredded chicken, thyme, and cracked black pepper. Bring to a low simmer and add the gnocchi. Cook for 3-5 minutes until the gnocchi float to the surface.
- Reduce heat to medium-low. Stir in heavy cream and baby spinach. Stir gently for 1 minute until spinach is wilted and vibrant green. Serve immediately once the broth is ivory and thick.
