How to Make Authentic Spanish Rice
- Place long-grain white rice into a fine-mesh sieve and rinse under cold water until clear. Spread on a paper towel to dry for 5 minutes.
- Heat vegetable oil in a skillet over medium heat. Add the dried rice and toss to coat. Stir frequently for 4-5 minutes until the rice becomes slightly golden and glossy.
- Push the toasted rice to the edges. Add minced white onion to the center and sauté for 2 minutes until translucent. Add minced garlic and tomato paste, stirring for 1 minute.
- Pour in chicken broth, diced red tomatoes, and salt. Bring to a rolling boil, reduce heat to the lowest setting, cover tightly, and simmer undisturbed for 20 minutes.
- Remove from heat and let rest, covered, for 10 minutes. Remove the lid, fluff gently with a fork, and garnish with chopped fresh cilantro and lime wedges.
