- In a large mixing bowl, whisk together the all-purpose flour, rolled oats, baking powder, and sea salt until well combined.
- Make a well in the center of the dry ingredients and add the Greek yogurt and honey. Fold gently with a spatula until a shaggy dough forms; do not over-mix.
- Turn dough onto a floured surface, pat to 1-inch thickness, and cut with a 3-inch cutter. Place on a parchment-lined baking sheet.
- Brush the tops with the egg wash and sprinkle with dried herbs. Bake at 400°F (200°C) for 15-18 minutes until golden-brown.
Notes
For the best texture, use cold Greek yogurt straight from the fridge.
