- Prepare the Beef: In a medium bowl, toss the thinly sliced steak with 1 tbsp soy sauce and 1 tbsp cornstarch until evenly coated. Set aside.
- Mix the Sauce: In a separate small bowl, whisk together the 1/2 cup soy sauce, beef broth, brown sugar, minced garlic, grated ginger, rice vinegar, and the remaining 1 tbsp of cornstarch. Set aside.
- Cook Noodles: Cook the noodles according to package directions. Drain and toss with sesame oil to prevent sticking.
- Cook Beef: Heat 1 tbsp of vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer (cook in batches if necessary to avoid overcrowding) and cook for 1-2 minutes per side until browned. Remove from the skillet and set aside.
- Thicken Sauce: Add the remaining 1 tbsp of oil to the skillet. Pour in the sauce mixture and bring to a simmer, stirring constantly. Cook for 1-2 minutes until the sauce has thickened.
- Combine: Return the cooked beef to the skillet, along with the cooked noodles. Toss everything together until the beef and noodles are well-coated in the sticky sauce.
- Serve: Garnish with sliced green onions and sesame seeds. Serve immediately.
