Prepare the Strawberry Puree
- In a small saucepan, combine strawberries and 1 tbsp water. Simmer over medium heat for 8-10 minutes until soft.
- Blend the cooked strawberries until smooth. Pass through a fine-mesh sieve to remove all seeds, leaving a smooth liquid.
Construct the Hot Chocolate
- In a clean saucepan, whisk milk, cream, and strawberry puree over medium-low heat until steaming.
- Add 2oz of chopped white chocolate, vanilla, and salt. Whisk until the chocolate is fully melted and the drink is an opaque pastel pink.
- Remove 1/4 cup of the liquid and use a frother to create a light pink foam.
- Pour into a clear glass mug, top with foam and the remaining 2oz of white chocolate shavings. Garnish with a fresh strawberry.
