Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, cook the ground beef with the diced onion until the meat is browned. Drain off any excess grease.
- Stir in the minced garlic and cook for another minute until fragrant. Add the taco seasoning and water, and simmer for 3-5 minutes until the sauce has thickened.
- Spread the refried beans evenly across the bottom of the prepared baking dish. Top with a layer of slightly crushed tortilla chips. Spoon the seasoned ground beef mixture over the chips, followed by the salsa.
- Sprinkle the shredded cheese blend evenly over the top. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is bubbly and golden.
- Let the casserole rest for 5 minutes before cutting and serving with your favorite toppings.
Notes
Tip 1: For the best melt, shred your own cheese from a block.
Tip 2: Use sturdy tortilla chips to prevent them from getting soggy.
Tip 3: Assemble the casserole up to 24 hours in advance for an even quicker meal.
