Bake the Potatoes
- Preheat oven to 400°F (200°C). Pierce potatoes with a fork, rub with oil and salt.
- Place potatoes directly on the oven rack. Bake for 50-60 minutes until the skin is crispy and the interior is soft.
Prepare the Taco Beef
- Brown ground beef in a skillet over medium-high heat until crumbles are dark reddish-brown.
- Add taco seasoning and water. Simmer until the liquid has evaporated and the beef is well-coated.
Assemble
- Split potatoes and fluff the steaming white interior with a fork.
- Load with beef, followed by cheddar cheese, a dollop of sour cream, tomatoes, and scallions.
