- In a medium bowl, combine the thinly sliced cucumbers, red onion, and fresh cilantro.
- In a separate small bowl, whisk together the rice vinegar, lime juice, fish sauce, granulated sugar, and chili garlic sauce until the sugar is fully dissolved.
- Pour the dressing over the cucumber mixture and toss gently to coat everything evenly. For the best flavor, let the salad chill in the refrigerator for at least 10 minutes to allow the flavors to meld.
- Just before serving, top the salad with chopped roasted peanuts and optional red chili slices. This adds a wonderful crunch and a final touch of heat.
