- In a small mixing bowl, combine the Dijon mustard, honey, and mayonnaise. Whisk vigorously until smooth and glossy. Season with a pinch of salt and pepper.
- Spread the softened butter evenly across one side of each of the 4 slices of bread. This will be the outside of the sandwiches.
- Place two slices of bread, butter-side-down. Spread a thick layer of honey Dijon sauce on the inside of each. On the bottom slices, layer with 2 slices of Monterey Jack, the folded deli turkey, the thinly sliced red onion, and the remaining 2 slices of cheese. Close the sandwiches with the top slices of bread, butter-side-up.
- Place a skillet over medium-low heat. Cook the sandwiches for 4-5 minutes on the first side, until a deep golden-brown crust forms. Flip carefully and cook for another 3-4 minutes, until the second side is toasted and the cheese is deeply melted and gooey.
- Remove from the skillet and let rest for one minute before slicing in half diagonally. Serve immediately.
Notes
Medium-Low Heat is Key: High heat will burn the bread before the cheese has a chance to melt.
Don't Press Down: Avoid the temptation to press down on the sandwich. Let the heat do the work for a fluffier result.
