- Lightly toast your bread slices until they are golden brown and crisp. You can do this in a toaster, a skillet with a little butter, or under the broiler.
- In a small bowl, mix together the mayonnaise and Dijon mustard. Spread this mixture evenly on the inside of both slices of toasted bread.
- On one slice of bread, begin layering your ingredients. Start with the provolone cheese, followed by the sliced turkey. Add the tomato slices, red onion, and lettuce.
- Place the sliced or mashed avocado on the other slice of bread. Season the avocado with a pinch of salt and pepper.
- Carefully place the avocado-topped slice of bread onto the other half to close the sandwich. Slice it in half diagonally and serve immediately.
Notes
Tip 1: To prevent the avocado from browning if you're making it ahead, squeeze a small amount of lemon or lime juice over the avocado slices.
