Preparation
- Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper. Pat the salmon fillet completely dry with paper towels.
- Place salmon skin-side down on the sheet. Drizzle with 1 tbsp (15ml) olive oil and rub to coat. Season generously with salt and pepper.
The Roast
- Layer three thin lemon slices on top of the fillet. Drizzle the lemons with the remaining 1 tbsp (15ml) olive oil to assist in caramelization.
- Bake for 12-15 minutes until the salmon is opaque pink in the center and the edges are slightly roasted and browned.
Finishing
- Remove from oven and let rest for 3 minutes. Generously sprinkle with chopped fresh dill and drizzle with the pan juices before serving.
Notes
Ensure salmon is at room temp for 15 mins before baking for even cooking.
